I made pancakes again this morning! Nice thick ones. In the mix was 50/50 flour, oat bran flour, ground flaxseed, baking soda, baking powder, oats, skim milk, mashed bananas, ground walnuts, and an egg.
I topped them with some lite syrup (we didn't have any of the real stuff left) and I actually ended up having one more after the 2 pictured. I also had a cup of coffee with skim milk and Truvia.
After breakfast, Kelly and I headed out for our mani/pedi date. I got both but she only got a pedi. Because I'm wearing leopard print heels with my dress tomorrow I chose a very neutral light pink, just to make my nails look pretty and polished, not wild and crazy.
I hate feet :) Anyway after nails, I dropped my car off to get new tires per my dad's request. The new one I got the other day is now in the trunk as my "spare." Then we headed out to La Bella's Pizza for lunch. I was totally starving. We ordered a classic margherita pizza and I ate 3 slices. It was delicious!
I was also in charge of dinner tonight so we ran to the grocery store before picking up my car to get a few items. After chit-chatting the afternoon away I got to work on dinner. I made black bean and quinoa burgers with a side of sweet potato fries. I put my burger on a bed of spinach and had some slices of cucumber as well. Veggie filled dinner!
It's still light out so I'm going to see if my mom wants to go for a walk again tonight. I should really get moving after all that pizza today teehee.
