Coyote Flaco and My Last Day of Summer

Yesterday was my last day at Sheep Meadow Animal Hospital for the summer (and possibly for good depending on what happens this year). I didn't prepare my meals ahead of time and ended up rushing breakfast and getting Subway for lunch. Not a good idea for the long day (Tuesdays are our 10+ hr day).

1 egg + 2 whites + Oregano + Garlic Powder, Coffee
Veggie Delight 6" Sub
Kashi Honey Almond Flax Granola Bar
Salmon, Sweet Potato, Rice (which I gave to Lena instead haha)
Dessert was some peach cobbler which I didn't snap a picture of before eating. I got distracted by something which I don't remember now.

I was going to head back to Boston today but I changed my mind and decided to relax a bit instead. Slept in. Lounged by the pool. A good day all around. Before going out to the pool I had a wedge of Laughing Cow and a few Triscuits followed by one of my aunt's bran muffins with a scoop of p.b. Recipe for muffins to follow.

MORNING MUFFIN
  • 3 3/4 cups unprocessed bran
  • 1 1/2 cup + 1 tbsp whole wheat flour
  • 1 1/2 cup + 1 tbsp unbleached white flour or oat flour
  • 1 cup lightly packed brown sugar
  • 2 tsp baking soda
  • 1-2 tbsp ground flaxseed
  • 1/2 cup + 2 tbsp vegetable oil
  • 3 3/4 cup lowfat buttermilk
  • 3 eggs + 2 egg whites (or 4 eggs)
Sift together dry ingredients except bran. Add bran to sifted ingredients. Combine oil and buttermilk in a separate bowl. Beat eggs and add to wet ingredients. Combine wet and dry ingredients. Add more buttermilk if needed. Ingredients should be wet but not runny. Pour into greased muffin tins and bake @ 425 degrees Fahrenheit for about 15 minutes (watch muffins though because they may get done before that depending on the oven) Cool and remove muffins from pans.


While out in the pool I had an apple and read a magazine. It got wet of course :(

Afterwards I headed out to a semi-new Mexican restaurant in the area called Coyote Flaco with my mom and aunt. It was really good! Great food and prices!

And to finish off the night I had my first trip to Happy Clown for the summer. It's our local ice cream joint. I got a Butterfinger Flurry. I ate about half of everything from the night and am stuffed!

Packing up and heading out in the AM. My first class is at 5:30 tomorrow night! Goodbye Summer.....
