Community Needs Assessment

Like I said yesterday was spent doing homework. More specifically – researching journal articles for the literature review portion of my thesis. Sounds like a blast right?

Eats for yesterday:

DSC00893A mixed up pasta dish (~1/2 cup white pasta that had to be used up, a scoop of green beans, a scoop of kidney and garbanzo beans, a couple turkey meatballs, marinara sauce, and cheddar cheese….yeah I said it was mixed up!)

 

That refined pasta didn’t hold me over too long though – what a surprise. The much more substantial meal that leaves me full for hours is:

DSC008941/2 cup oats, 1 cup skim milk, 1 chopped apple, loads of cinnamon and nutmeg, and a couple chopped walnuts

 

Monday is yet another busy day of schoolwork. I had stuff for both my online classes as well as my Programming, Planning, and Evaluation class on campus. Have you ever conducted a community needs assessment? That’s what we are going over right now in class.  For our project, my group is going to conduct an assessment at a local elementary school!

I also managed to get in about 25 minutes of strength training using the tear out cards from one of my Self magazines and another 30 minutes or so of stretching.

Eats for today:

DSC008982 leftover turkey meatballs, broccoli, and eggplant parm of which I only ate half (did I mention that I’m picky about leftover?)

DSC00900Plain 0% Chobani, Ezekiel 4:9 Golden Flax cereal, and frozen blueberries

Perfect.

It appears as if I ate everything backwards today doesn’t it? Oh well sometimes I like to switch it up.

I also have some goods news and bad news to end the day with. Which do you want first? Okay the bad news is that one of the cats at my parents, Ferdinand, is at the vet’s (where I work back home) overnight! He has a fever and from the picture I saw it looks like an abscess on his cheek. I feel so bad for him! My good news is that I got a call to set up an interview for a part time job. Fingers crossed!
