Two bad citizen moves in two days!

I must admit I’ve been a bad citizen of the U.S. as of late. I forgot about jury duty yesterday (I meant to call and postpone since I’m out at school but my legal residence is still in NY) and also because my residence is still NY, I didn’t vote today because I never requested an absentee ballot either. Oopsies.  The jurors office didn’t call me back after I left a message so I’m not sure what’s going to happen with that. Does anyone know if there is some sort of penalty for not going to jury selection? It was an honest mistake I swear!

 

Other than that I’ve had some boring eats followed tonight by an amazing dessert that my sis-in-law shared with me. It’s from Pillsbury but I made some substitutions.

 

Dutch Apple-Pumpkin Crisp

INGREDIENTS
1 1/2 cups chopped peeled apples
3/4 cup all-purpose flour (I used whole wheat)
3/4 cup packed brown sugar
1/4 cup butter or margarine, softened (I used canola oil)
1/4 teaspoon pumpkin pie spice
1 cup canned pumpkin (not pumpkin pie mix)
1/3 cup granulated sugar
1/4 cup milk (I used skim)
2 tablespoons all-purpose flour (again I used whole wheat)
1/2 teaspoon pumpkin pie spice
1 egg
Whipped cream, if desired


DIRECTIONS

Heat oven to 350°F. Spread apples over bottom of 9-inch glass pie plate. Microwave uncovered on High 4 to 6 minutes or until apples are crisp-tender.  Meanwhile, in small bowl, toss 3/4 cup flour, the brown sugar, butter and 1/4 teaspoon pumpkin pie spice until crumbly. Set aside.  In medium bowl, beat remaining ingredients except whipped cream with wire whisk until smooth. Pour over apples. Sprinkle with flour mixture. Bake 30 to 35 minutes or until golden brown and set. Cool 20 minutes. Serve warm with whipped cream.

I forgot a picture after I added the pumpkin mixture and before the crumble top. But you get the hint. It was delicious by the way.  A mix of apple crisp and pumpkin pie together =  HEAVEN. I had two helpings :)

Raf drove back to Boston for a brief visit tonight too – just so he could vote! We ended up going to see Saw 3D (aka Saw 7) since I had finished all my homework much earlier. I really thought they were going to end it this time but I guess that is how horror franchises are – neverending. It was alright, just like the rest. I mean none of the sequels compare to the first one anyway. Do you like scary movies?  I feel like I’ve seen a bunch lately!

  1. I don't know how you handle scary movies. I am such a weenie. Even the previews for scary movies freak me out!

    That apple crisp sounds so amazing, and wouldn't you know, I've got some apples and pumpkin to be used up!

    I bet they didn't even need you for jury duty. I had it before and I had to call in and they said they didn't need me. If you haven't heard anything, you're probably in the clear. (But really, what do I know?)

  5. Haha. One time I got a letter in the mail stating I'd failed to show up for jury duty. I was so confused as I never even knew I supposed to be there! So I called and left a voicemail with the judge and no one called me back.. I guess it was ok? That was about 6 months ago.

  6. @ Lily - they didn't call me back either. But I emailed too and they got back to me saying they gave me a 2 year student postponement :)
