A Busy Week & Sad Day

Wednesday

Wednesday was my first full day home and even though I didn’t have to work I still found myself quite busy.  First of all, I am now personal trainer, nutritionist, and personal chef for my mom for the next month so that alone is already taking up quite some time! She needs some assistance and motivation with her diet so I’m here to provide it! I’ve decided that I’m basically going to just make double of what I eat for breakfast and then give her a meal plan for lunch and dinner.  Of course with the holidays there are going to be adjustments as needed but we’ll deal on an individual day basis.

I got up early to make sure my mom did 30 minutes of strength training followed by 30 minutes of cardio, which I of course did alongside her.

Breakfast on Wednesday: 1/2 cup oats, 1 cup skim milk, 1/2 banana, 1 tbsp Teddie unsalted peanut butter

I had tons of errands to do with #1 on the list being washing my car! It was disgusting after that road trip.  I got back at just the right time to start making dinner since my mom was working late anyway. On the menu –  Honey-Soy Broiled Salmon (one of my fave recipes from EatingWell), Broccoli, and Quinoa.

I also got in the mood to bake that night so I made some Chia Quick Bread. It turned out a bit dry though so I think next time I may add something to moisten it more.

Thursday

Back to work at the animal hospital. I put my mom on the treadmill while I got ready for work. I know I’m bad ;)

Breakfast: 1/2 cup Vanilla 0% Chobani, 1/4 cup Muesli, 1/2 cup pineapple

Per usual, work was crazy busy. We ended up having an extra spay and neuter to do so we never got to eat the christmas meal a client bought us (pork, green beans, and mashed sweet potatoes). I was able to grab a scoop of sweet potatoes and green beans for “lunch”.

And a while later I grabbed a clementine and ounce of almonds I had brought.

Luckily we got out on time and I was able to head over to my grandparents for dinner. They were having pork too but I don’t really like pork so I tried a small piece to make them happy and then my grandma made me some shrimp special for me. Love my grandma!

DSC01501 Also had mashed potatoes, cauliflower & broccoli, and applesauce.

By the time I got home at 8 I was exhausted. What a long day. And that wasn’t even the end of it – I had serious thesis drama yesterday. I can’t go into details but let’s just say that a big change has happened in the past 24 hours that I did not see coming. I’m hoping it’s for the better.

Friday

Today started off fine. Put my mom on the treadmill, got ready for work, and made breakfast. Bob’s Red Mill Mighty Tasty Hot Cereal made with water, 1/2 banana, cinnamon, and 1 tbsp Teddie unsalted peanut butter.

Then it was off to work and my day became unbelievably awful. A 9 month old kitten died and I cried. I felt so crappy that I was utterly useless for about an hour and even contemplated going home. That’s one of the reasons I changed my mind about going to vet school. I just can’t handle it.

The kitten died right before lunch time and thus I lost my appetite. I made it through the rest of the day at least. It’s so depressing though.

On the way home I stopped by the local gym because they are having a deal for students to sign up for the 1 month of winter break. My co-worker gave me money for it for my Christmas present. (Thanks Wendy!) I’m going to try to go in before work tomorrow if I can get myself up that early……

Dinner was a recipe from Women’s Health November 2010 issue - “Healthy Chicken Parmigiana with Penne”. We also had some whole wheat garlic bread on the side.

Another long, exhausting day – mostly mentally. I’ve got higher hopes for tomorrow though because it’s my first blogger meet-up :) Going to Heather’s apartment with about 18 other girls I think! I didn’t have time to make cookies for the cookie exchange or a dish for dinner either. I’ve got work until 3 tomorrow and then am heading straight to the meet-up.

Time to meal plan for tomorrow and then go to bed. Goodnight folks.

  1. I'm sorry to hear about the kitty! Even though I am allergic to cats, it's always sad to see an animal die. I hope that you cheer up soon. :)

    Your mom is lucky to have you training her and cooking for her! I need to dig up my Nov WH mag and make that recipe. Looks great!

  3. So. Sad. I heart kitties. My kitty is wonderful. *sniff*.

    But in other good news: I'm going to start up my blog again since I'm "out of work" for a while so to speak ;) I'll be posting a new one tonight! yeah!
