I've been in a baking mood lately. Last night I whipped up a batch of oatmeal cookies and tonight I made chocolate zucchini muffins. I used both recipes from this site - www.superhealthykids.com. I'm thinking of making the pumpkin cookies tonight too.
So for brunch guess what I had? Oatmeal cookies! With vanilla Chobani, blueberries, and banana. And of course some coffee :)
I spent most of the afternoon at the mall because I was in desperate need of some new bras. Hello VS!
When I came back I was very hungry but I knew Mom would be making dinner so I had some slices of deli turkey and a piece of string cheese and a peach. The picture isn't very appetizing since it doesn't have the peach in it.
Dinner was stir-fry! Brown rice, chicken, zucchini, carrots, green pepper, and broccoli.
And because we have so many zucchini popping out of my parent's garden, I made the chocolate zucchini muffins from the website I mentioned earlier. I made regular size muffins, mini muffins, and mini loafs since I had so much batter (double batch).
We are planning on bringing the muffins on our camping trip. We leave Sunday so I won't be blogging from Sunday to Wednesday.
Do you have any last minute summer trips planned? Do you prefer baking or cooking?
I prefer cooking...you don't need recipes for that! My summer trip to Canada with my family was kind of last minute...we were actually just planning to go 2 hours south to the mountains, not 12-18 hours up north!

ReplyDeleteNo last minute trips planned at this point...I'm heading home tomorrow, after spending almost three weeks in Washington DC, so I'm a bit traveled out!
I love to cook AND bake! Cooking allows for more creativity, because you can improvise as you go; baking is great because you can pop something in the oven, forget about it, and VOILA!
